What version of evolution and gtkhtml are you using?  The gtkhtml (0.7)
that comes with the evolution 0.6 did not have XIM support enabled so it
was difficult to enter extended characters. There were a few other
problems with with the characters sets in evolution and gtkhtml that
were not fixed until yesterday. So to summarize these problems should be
fixed in CVS and work properly in the next evolution preview release.
