You can use imapx for both exchange and dovecot. As you have already
observed there is good progress here. IMAP+ would be made the default on
3.0. We had set the default to imap in gnome-2-30 since that was first
release of imapx. Evolution 3.0 should have imapx as the default. 

We might also think of dropping imap provider in future once we
make sure all user needs are satisfied with imapx.

Currently imapx is in feature parity with imap provider. imap extensions
such as condstore would be implemented in imapx, there are already some
fixes getting in on those lines..
