Installed the experimental evince. No change in behaviour.

Installed the experimental libpoppler-glib8 and I can now edit a field, or at least enter some text. Whatever was there before remains on screen, clicking back in the field shows the text I entered. Saving and reloading the PDF has blank fields displayed, but they contain the correct text upon trying to edit one?

e.g. opened:

Click in field and change to 'test':

Press enter:

Save as a new pdf and reopen:

Click into the field:

Very odd.

Looking over https://gitlab.gnome.org/GNOME/evince/-/blob/gnome-40/NEWS for the changes from 3.38.2 to 40.2 I can't see anything related to PDF forms. If Evince 40.2 from experimental still fails for you, you might consider updating libpoppler-glib8 to the version from experimental, too.
