Evince supports XPS files as you can see it in the source code: https://git.gnome.org/browse/evince/tree/backend/xps However, as many other backends supported, it is configurable at build time. In this particular case, it requires libgxps: https://wiki.gnome.org/libgxps If the installer you used does not have XPS support, then this only means that it was not built with that option enabled.
