You can add/change the shortcut as follows:

- Enable the /desktop/gnome/interface/can_change_accels flag in GConf
- Open Evince
- Hover (with your mouse) over the menu item you want to change
  the accelerator key for
- Press the accelerator you want on the keyboard, e.g. Ctrl-Shift-T
- Now quit Evince
- Disable the aforementioned GConf key again

The next time Evince starts your custom shortcut key will be preserved.
Note that this also works for many other Gnome applications as well.
