In Epiphany >= 1.4, you can get the directory to install extensions into
from the .pc file:
pkg-config --variable=extensionsdir epiphany-1.6

Normally, this is $prefix/lib/epiphany-$MAJOR/extensions ($MAJOR=1.4 or
1.6)
and for 1.2 it's $prefix/lib/epiphany/extensions
