You need to install appdata-tools to build EasyTAG from git:

http://people.freedesktop.org/~hughsient/releases/appdata-tools-0.1.7.tar.xz

It contains the APPDATA_XML macro that is used in configure.ac. The make 
rules are then substituted into the Makefile, which is likely where the 
error that you see comes from.
