I'm also not aware of any specific sheet for Organizational Charts.
However, I think that Dia is well suited for such diagrams. If your 
diagrams are rather complex,
you may want to have a look at the Organization Chart Plugin in order to 
speed up data entry:

Are there any specific shapes missing that you are looking for?
Would you prefer an explicit Sheet called "Organizational Chart"?
