I think those ibus engines can be enabled/seen by executing following command
 "gsettings set org.gnome.desktop.input-sources show-all-sources true"
Then in the Input Sources list, you can see all the available layouts for Chinese.

Just tried. Many more input methods did shown up.
But no, the 2 input methods I mentioned were not there.
I think they should be named like these:

• Chinese (Cangjie)
• Chinese (Quick)
  

Please support these 2 in the live CD. Thanks.
