The GStreamer properties is a piece of junk that should die (and I've
been whinging about it for a couple of years). The only thing to select
is which device you want to use for capture and output. This is
something that the updated sound capplet[1] can do fine, and
applications can override if their needs are greater than what's
provided.
So it's not random nuking, but selective nuking of things that should
never have been in the first place.
