Hi, Personally, I think the best solution for Evolution and GNOME is to put evolution-data-server (and libsoup) into G2.6 Desktop, and leave Evolution + gal + gtkhtml for later, say G2.8 Desktop. With any luck, the e-d-s API will get a lot of use and be perfected, and could then go into G2.8 Platform (which would rock). At the same time, Evolution might even loose the Gal dependency and could end up very nice for G2.8 Desktop. As you say, Evo is a very large program and whilst development is rapid, it may not be ready for the hard(ish) deadline of GNOME 2.6.
