There's no upper limit on the pixel size of cover art images.
Banshee tries to pick the best image from a folder by looking at the
filename and the file size (in kB, not in pixels).
So naming your big file "folder.jpg" should work.

Banshee is not looking for new cover art when it's found one, so you
have to set the image manually : just drag-and-drop the image you want,
or right-click on the cover art in Banshee and you can choose an image
file.
