File > New > user Interface file
Then try to import my example.ui file

Most of the time, files with a .ui extension are glade files. You can
open them in anjuta that will load glade automatically or using glade
standalone. What's happen when you open such file, you get a see only
some xml text?
The handling of the file in based on their mime type, so it's possible
that something is wrong on your system here. You can run
xdg-mime query filetype _your_file_name_
You should get
application/x-gtk-builder
