I don't know exact specs of your device, but they are not exactly those of a powerhouse workstation. 
You'd be crazy to try unity on anything less than 1 gig of RAM with a dual core cpu at something close to 
2GHz for the old 2d capible versions, add 
another bit of ram, and prefferably decent graphics if the cpu is marginal. Of course there are other 
factors, not all dual core cpu are created equal, 
internal arch, cache sizes and so forth combined with bus speeds make a lot of difference, but those are 
rough specs based on what I read and my 
experience. 
Gnome is not going to use as much ram, but is still going to want more processor than you have I reckon. 
Mate is better for what you want to do, but still won't be a rocket sled most likely with processor intensive 
graphical apps. 
If you have the time and pasience you'd be better off going ultra light, e.g. my GUI of choice for marginal 
to mid range hardware,fluxbox, but this will 
take more work, and while I have rough notes ready to help anyone do this the ready for prime time wiki 
article is still a couple hours of edits and a 
bit of experimentation off, and would be  based on Arch-linux although it will work on some other distros 
with little modification.
Your best bet is to only start the GUI as needed, and only run one or two apps at a time there. 
Do everything you can on the commandline in your VT-consoles.
