It will use more memory on larger folders, but it shouldn't be 1:1... 
But either way, it won't be happy with folders containing tens of
thousands of emails.

Amazingly slow. Flicking between folders takes about 30 mins or more at
the moment, and this is viewing folders with 10 emails or 10,000. 

Switching between folders with 10 emails should be pretty much
instantaneous.

Emails sent never arrive.

Also shouldn't be a problem. (Using SMTP instead of WebDAV might help
here.)

Moving between folder triggers Exchange AV runs. Each time a user
changes folders, it causes Exchange to scan that folder with the AV
package

I suspect this is probably the cause of most of your problems. Connector
uses Exchange in unusual ways, and the antivirus package is probably
tripping it up (most likely unintentionally). Switching to the new AV
package you mentioned might help, but it also might not.
