  If I'm not mistaken, all you need to do is add a file handler in your MIME database, and it will appear as an option in the Evolution attachment handler.  To do that, go to System-->Settings (gnomecc at the command line) and choose, under "Document Handlers," the "File Types and Programs" capplet.   Then add or change the .doc file type.

I could be completely wrong on that, though. I would test, but I don't have the plugin. :)

Let me know if that works.
