Currently the documentation is here

It was previously written in docbook format, the build tutorial is still in this format. More recent documentations use mallard format (http://projectmallard.org/).

Else there are already some tutorial using Anjuta developed outside Anjuta in GNOME here:
  https://developer.gnome.org/gnome-devel-demos/stable/index.html.en
But, I don't know the persons responsible for those pages, there are some links though.
