I personally dislike the 'var' usage because it make the code harder to
understand.

I guess you have to make your declaration:
private Gee.List<PdfDocument> pdfDocuments =
new Gee.ArrayList<PdfDocument> ();
How about:
var pdfDocuments = new Gee.ArrayList<PdfDocument> ();
