I really think this is best done by an options button to an advanced
settings / export prefences dialog on the basis that this will be
something that users wont need to change every time but still might want
easy access to and take a small detour to the export prefernces as part of
the workflow of the task.

The simple setting of Document Compressed or Document Not Compressed could
and probably should be decided by having two types in the file type list.
