VojtÄch, the GTK3 dependency change related with following commit, I 
looked now:

    Bump minimum required version of key dependencies

I reported this issue in Bugzilla:

Prewious GTK dependency if I undo this commit is following in 
configure.ac file:
m4_define(gtk_required_version, 3.1.91)

You possible to undo this change with own risk, but if an Orca fix 
related important to require Orca gnome-3-6 branch and master version 
with GTK 3.5.16 or higher version, Orca possible will be not working 
fine some situations. I not tested this with Ubuntu 12.04.
If you real would like undo this commit, you need use following command 
in gnome-3-6 branch to undo this commit temporary:
git reset --hard 69494d90e15cf4a9feac0058d8a7d24a4aef7c80
I think enough to write after --hard option four or five numbers the 
commit number, not need entire identifier.
