Ubuntu has had problems delivering GNOME apps that use Clutter (like totem), so they stayed in old versions. It seems this will be fixed in Ubuntu 12.10

So in general terms, Ubuntu will use more updated GNOME apps than previous versions.
Of course, the main difference is Unity, but they also have other alternative components to GNOME, like the the login greeter, using LightDM instead of GDM.

What parts of ubuntu aren't directly from gnome3.4?
For example what gtk?
