I don't know anything about UML, but you could try looking at MetaUML:

which I found with a quick Web search for UML-related LaTeX tools.

There's a LaTeX package for almost everything, and it seems that UML is no
exception.

The abundance of packages is one reason why I'm a real LaTeX enthusiast.
