With Nemiver 0.8.0, you can click on Edit -> Preferences -> Debugger and
set the path to the GDB binary you want. That setting is persistent.

With prior versions of Nemiver you have to set a gconf key:

gconftool-2 --set --type=string /apps/nemiver/dbgperspective/gdb-binary <path/to/your/gdb/binary>

That setting is persistent as well.
