I don't know how to access or modify the preference through Nautilus
directly, but using gconftool-2 (via the command-line) or through
gconf-editor (graphically), you need to set the
/app/nautilus-cd-burner/temp_iso_dir key to a directory of your choosing
(such as /home/your_user/Temp or whatnot).

For example to do this via the command-line, open a terminal
(Applications -> Accessories -> Terminal) and run the following (where
the first dollar sign is your prompt, and /var/tmp is the directory of
your choice which you should modify as necessary):

$ gconftool-2 --set /app/nautilus-cd-burner/temp_iso_dir --type string '/var/tmp'
