Where are the applications in 'Open with other application" coming from?

Hello,

I have a short question about the long list appearing in

right-click on file > Open with > Open with other application

is coming from? I guess, a part is coming from what was saved
in /usr/share/applications/*.applications. And the rest? Seems to be the
list of GNOME "products". Is it?
