Hello Adam,
please create new bug report on upstream bugzilla:
https://bugzilla.gnome.org/enter_bug.cgi?product=gvfs
You are not a first one who is facing problems with fuse mount points. There is already Fedora's bug:
https://bugzilla.redhat.com/show_bug.cgi?id=1244596
Unfortunately I'm not able to reproduce this behavioral. What packages were updated?
Could you try to downgrade fuse packages and retest? Could you try to downgrade gvfs packages and retest?
What is output of the following commands when the problem occurs?
$ pgrep -a gvfsd-fuse
$ mount | grep fuse
$ ls -l /run/user/1000/gvfs
Regards
Ondrej

Sny tips for when accessing a GVFS mount via Nautilus works but does
not appear in /run/user/1000/gvfs, as if the FUSE mount doesn't happen?
Only happens on one openSUSE tumbleweed install, other is OK. It worked
before a recent package update; we do most of our file editing via GVFS
WebDAV & SFTP so it is pretty frustrating. GVFS & FUSE package
versions are the same on both hosts.
The folder created in gvfs looks like:
"?????????? ? ? ? ? ? sftp:host=yannigan
-orange.example.com,user=bcreswel"
I looked at the output of journalctl and do not see anything that
obvisously looks like GVFS crashed.
