My experience is that when I run a GTK application remotely I get the
theme on the local machine, which I assume is exported as some kind of X
resource? However, if the theme set on the local machine is not
installed on the remote machine then the application will appear with
the default theme.
This applies when running inside a GNOME session on the local machine.
If I'm connecting from an otherwise empty X server (eg with a minimal
window manager or on Windows) then I find I have to run gnome-session on
the remote machine to get a them at all. I assume this is because
gnome-session is invoking the configuration daemon, but I don't know.
Hope that helps,
John
