It's unclear to me why you'd want to use Gtk with Spice (you are talking about the electronic circuit simulator, right?). Why not use MacSpice[1]? It's equally unclear to me what Alsa would have to do with Spice... unless you mean a different program.
And while jhbuild can automate the build process, it doesn't do any porting work. So unless there's a CoreAudio backend to ALSA (seems unlikely), you'll either have to find a patched version of it somewhere or port it yourself -- which probably means writing a CoreAudio wrapper with the ALSA API.
