What do you mean by "headerbars"?

Something like this, I assume: https://developer.gnome.org/gtk3/stable/GtkHeaderBar.html

Yes, it's been done. Google for "gtk3 themes mac".

Even if GtkHeaderBar hasn't been styled yet in one of those themes, it's likely that someone will since the CSS "API" has been declared stable in 3.20.
