GTK Menu Questions

Gentle People:

    1) In GTK is there a way to delete and recreate a large menu 
containing multiple
submenus? Ideally one would delete or replace this menu at the head and
recreate it with different entries.
   2) After user selection of a menu entry, is there a way to "reset" 
the menu display to the initial value displayed
when the window was created? For example when the window opens the menu 
displays the value "Joe",
then the use selects "Bill" and dose a transaction. Now can we S/W reset 
the menu  display to "Joe"?
