AFAIK, there are just a couple of places in an installed GTK where an
absolute path is used: the *-config scripts and one or two header files.
Install your GTK stuff at /opt/gnu, tar them from /opt/gnu, this is your
GTK distribution. If somebody else wants to install it, he untars it in
(for example) /usr/local, edits the *-config scripts and the header files
and everything works like before.

Somebody please correct me if I'm wrong.
