Trying to make a subset of gtk just to test printing sounds like an
exercise in futility. You might end up spending more time on the
subsetting than you would save in compilation time.
Gtk HEAD depends on a cairo that has been built to include the pdf
backend, which the publicly available cairo 1.0.4 win32 binaries at
ftp.gtk.org haven't, so you would also need to build cairo yourself.
