How to Disable All Gtk Keystrokes

Hi!

I'm writing a plain text editor, and I want to disable any keystrokes
predefined by gtk, i.e. Ctrl-V for paste. I need to do this because
this editor is meant to provide full support for fully
customizability, in the sense Emacs and Vim is (maybe not as
comprehensive :).
