Saving Backup copies

I cannot find any reference to how to set Gnumeric so that it
saves a backup copy of a current file under a backup name.
When working with important numerical data - for example I keep my
employee timesheets in Gnumeric - it would be valuable to be able to:
1. Have several levels of backup available - to be set by user.
Timesheet-20091224.gnumeric
Timesheet-20091224.gnumeric-bkup1
Timesheet-20091224.gnumeric-bkup2
So that if you make a big mistake and save it you can recover back to the
previous backup.
2. Have an ability to designate at the time a file is saved as read only.
This can be changed from the filemanager if needed - but not from within
the file. Important for archiving business related applications.
