One question.
According to what you said, GTK print preview works by creating a PDF,
then displaying the PDF? No direct to X print-preview?

Gtk+ has a setting, gtk-print-preview-command, as to which
external preview command to use. It defaults to evince, but I
don't see any reason that acroread couldn't be used, although
a small wrapper script to handle options might be needed.
But this is really a Gtk+ question, not a Gnumeric one.
