I have had a bug filed against gnomemeeting. 
FYI, I don't know how to fix this :(

OpenH.323 can provide vastly more diagnostic information than that
currently provided by GnomeMeeting, right down to the level of packet
traces.  It would be desirable to have an option screen rather like that
in OpenPhone (the Windows client distributed by Equivalence (sp?))
giving apparently full control over the logging produced.

I would have filed this as a wishlist bug but I'm currently having
issues getting GnomeMeeting talking to some other endpoints which.
Solving these problems has been hampered by the lack of diagnostic
output from the program.
