You can edit the file /usr/share/applications/defaults.list
each line is of the form
mimetype=app1.desktop,app2.desktop

it there is no such line for the mimetype in the global or per-user
defaults.list file, one of the desktop files that declares it supports
the mimetype will be randomly used.
