Maybe this http://www-106.ibm.com/developerworks/linux/library/l-gnvfs/?ca=dnt-435 is what you are looking for. It is a very well-written tutorial on writing a gnome-vfs module. It doesn't go very deed in the internals of gnome-vfs itself however.
