Hi all,
is there a way to have an on-screen virtual keyboard when in "activities" mode?
As far as I can see, even enabling screen keyboard through universal access settings
won't do the trick.

The bad news is: no, because "normal" windows cannot be used in the overview.

The good news is: in 3.2. gnome-shell will have an integrated on-screen keyboard, which will work in the overview.

There is a bug[0] to follow, though the actual code currently lives on github[1] (I'm sure testing is appreciated).
