gnome-pilot has a weird history, with the disappearance of the
lead developer blighting the project.

There used to be quite a bit of info at
www.gnome.org/projects/gnome-pilot/ which was probably removed when
someone noticed it hadn't been updated in three years. It is still
retrievable using archive.org:

The current maintainer, JP Rosevear <jpr at novell dot com>
doesn't have much time to spend on gnome-pilot, and is only
an occasional visitor to this list.

David Desrosiers, maintainer of pilot-link, hosts quite a bit
of diverse info on palmos and linux, over at pilot-link.org. He's
also willing to host info on gnome-pilot. Take a look over there
for some general info.

Basic basics:
1. Make sure you have set permissions correctly on your USB or serial
device. Typically this is /dev/ttyUSB0 or /dev/ttyS0 respectively.
NOTE: if you are running udev, the usb device nodes may be created
automatically, in which case you probably need to edit a file with a
name like "/etc/udev/permissions.d/50-udev.permissions" to change
ttyUSB*:root:uucp:0660
to
ttyUSB*:root:uucp:0666

2. run gpilotd-control-applet to bring up a GUI for configuration.
Hopefully it's fairly self explanatory. You can configure the
various conduits, but if you're having problems see if you can
just get the backup conduit to work.

3. at this stage you should be able to sync your palm. All you
need now is to ensure gpilotd runs when you log in.
