I had the same problem some time (september) ago when I tried to sync my
Palm Tungsten T via Bluetooth.
pilor-x-fer  worked, gpilotd didn't. In this mailing list they told me
then that this wouldn't work at the moment with gpilotd, so it seems
that the gui of gpilotd presents options that aren't implemented yet.

If you can live without evolution try jpilot. This one accepts net:any
as device.

And of course: since it has been quite a while this information doesn't
have to be still correct.
