If so may Builder need access to that directory by default, I know I can
override the ones it has now, making useful to develop software.

This is a gap in the Xdg-App support for Builder right now, which we
hope to address in 3.22. We need to add support for the .json files that
xdg-app-builder uses so that we can ensure your dependencies are built
before Builder does the normal automake build.

As a hack, you might be able to manually build the deps where Builder
will try to build your project (.local/gnome-builder/builds/*/xdg-app/*)

Addressing this is on my list for the upcoming months.
