customize the gnome-menu

Hi,

at the time, i set up a larger network with debian clients. I customized 
the gnome-menu, in the way, that i created new categories and so on. 
When i install new software (using apt-get) the starter for this 
software will be set into the default category (e. g. openoffice's 
starter will be placed in the category "office")

Is there a possibility to change this default category?

Or, when I install new software, i can put the starter into the category 
i want on this clients. How can i export this setting (this starter) to 
the other clients? Is there a configuration file/directory for this?
