Config file formats?

I am trying to locate documentation and examples for Gnome configuratation
files in order to create an enterprise-wide Gnome configuration, in the
manner we have done for Motif, user shell logins, etc.  I have looked at
the following resources:

  http://developer.gnome.org/doc/API/libgnome/gnome-gnome-config.html
  http://developer.gnome.org/doc/whitepapers/SystemConfig/index.html

and found them to be quite skimpy.  Does anyone have documentation that
would fill out the above sources?  (Commented examples would be great!)
I am particularly interested in learning how to apply site-wide
configuration files in:

  /etc/gnome/config-override/
  /etc/gnome/config/
  /usr/share/gnome/apps/
