Look for a file named /etc/X11/gdm/gdm.conf or
/etc/opt/gnome/X11/gdm/gdm.conf, depending on your distribution.

This file contains a section [greeter] with a line
"Logo=/path/to/some/file.png". You can alter that line to point to
another picture (at least png and jpeg formats work).

This all assumes that you use gdm as your display manager, but I'm quite
sure that all others (xdm, kdm) have similar config files.
