How to modify the entries of a "menu" panel ?

Does anyone know if it is possible to modify the entries in the "Desktop" 
and "Parameters" sections of the "menu" panel (the one that is at the top 
of the screen, like in MacOS) ?

Or are they hardcoded in the sources of the panel ?

I haven't found any configuration file and gmenu doesn't change them...
