It is GNOME 2.0, despite some things the slashdot crowd would say.
Bluecurve is just a theme. To get rid of it, go Desktop Preferences ->
Theme and change to the default. You can get the standard GNOME icons by
opening gconf-editor, and changing the
desktop/gnome/interface/icon_theme preference to "gnome". There is also
an apps/metacity/general/theme preference for changing the window
manager theme, but you probably only have Bluecurve and Atlanta
installed - and IMHO Atlanta is horrendous :-)

The default Redhat panel configuration is different to the GNOME default
- we have a menu panel at the top of the screen, and no panel at the
bottom. Personally, I prefer a highly customised Redhat layout to the
GNOME default, but this is really just a matter of adding a menu panel
and deleting the redhat one if you want to get the GNOME defaults.

Not sure what the problem is, especially with duplicate entries, but
maybe someone else can help.

Yes, you can install new themes as well. The default theme is included,
though.
