Favorites be gone?

Here's a silly little question...

At the top panel in Gnome I've got the normal:

Programs  Favorites  Settings  Desktop

However, in the screenshots for Ximian I see:

Programs  System  Help

Is there some way to modify that manually? I realize that: "Well the
guys at Ximian did it." doesn't, by any stretch of the imagination, mean
that it's simple.

Frankly I'd be thrilled with just "Programs" up there if three was some
way to do it.
