gnome settings - where?!!!

Hi
There are tow setting on my gnome (about 1.1.90) which I cannot even find
to change

1. For some reason as a user the background of my gtk windows (eg: gmc are
now a yucky shade of brown)

2. File associations - I have tried to change the file associations for
html in the control panel. I click add to to list I type in galeon click ok
, nothing happens. I have even deleted text/html and recreated and netscape
and lynx still reappears

What gives!!!!
