Making SRPMS or RPMS

As RH Labs are pretty slow for updating RPMS, I'd like to make RPMS my
self. I can rebuild SRPMS into RPMS w/o trouble, but I'd like someone to
tell me how simply make a SRPMS with a tar.gz ?
